Here you go! This is my recipe of the most-liked instagram post of mine, the KFC Chicken Rice! The idea is to cook rice with extra flavours from the secret recipe of Colonel Sanders.
What you will need here :
- 2 cups of rice (washed and uncooked, because we’re going to cook them altogether in rice cooker)
- 1 tablespoon of soy sauce
- 1 cup of chicken stock
- 3 pieces of KFC original chickens. (I used different parts, 1 breast, 1 thigh and 1 drumstick.)
Put the chicken stock and soy sauce to the rice, add more water according to the rice cooker instruction. Put all of the chicken in it. Yes, it’s soaking in the water on top of the rice. Finally, cook your rice as usual and let all the secret recipe soaks in every bit of rice! You can add white or ground pepper to make it hotter.
An additional tips here: instead of putting all the chicken in the rice cooker, peel off the crispy part of the skin so that it will still be crunchy. Your chicken won’t be as tasty as before because all the flavours will be transferred to the rice.
Wait and wait patiently. When it’s done, open the rice cooker lids and shred the chicken into small pieces. Take out bones. Remember to mix the rice and chicken until the bottom of the pot because sometimes the stock settled down there. Finally, serve your KFC chicken rice with the peeled skins. Add cracked pepper if you want. Serve salad as side dish.
